The Dining Services teams at both the du Lac Assisted Living Residence and Long Term Care and Rehabilitation Center take special care to offer residents a daily selection of mouthwatering, fresh and healthy options. Dining at du Lac Assisted Living is a time for residents to come together to enjoy delicious meals made with garden-fresh ingredients. All meals are made from scratch, and all desserts are prepared on-site by du Lac’s outstanding dining services team.

The menus that Keith creates at du Lac are developed in collaboration with residents. He seeks their ongoing input to ensure that the dishes being served are resident favorites—or something fun and new to try.

Director Dining Services

Cooking is Keith’s true passion! He began his career in food services as one of the original dining employees at du Lac Assisted Living when it first opened in 2000, and has been a chef for 22 years, working his way up the ladder. As the Director of Dining Services, a position he has held since 2020, Keith’s focus has been not only on resident-focused dining and preparing delicious meals, but he also strives every day to help his team work to reach their goals.

What is your favorite thing about working here? Being able to interact with our residents, hearing their stories and the memories of their lives.

What is your favorite cuisine to prepare? My favorite to prepare is Japanese cuisine!

Tell us about the menus for holidays and special occasions like birthdays. For holidays, I really try to put out a nice spread with something for everyone to enjoy. Last year’s Christmas Dinner Menu was a really good example of that! I also try to incorporate foods that our residents may have enjoyed, or maybe even cooked themselves, before they joined our community.

How does the mission of the Sisters of Notre Dame de Namur play into the food and dining at Notre Dame du Lac?  The Sisters and our other residents have so many wonderful ideas when it comes to the menu. I really try and take the time to find a way to incorporate those ideas into the menus. Food is a huge part of not only making sure our residents receive proper nourishment, but I also want them to enjoy what they are eating and look forward to mealtimes with their friends!
